This vegan sharlotka recipe is a special adaptation of my traditional Sharlotka recipe, crafted especially for my sister. After a few trials and errors, I managed to find the perfect combination of ingredients that satisfied both her vegan preferences and my desire for a delicious dessert. I’ve prepared this dessert numerous times for gatherings with both vegan and non-vegan friends and family, and it has always been met with rave reviews 🙂
Vegan Sharlotka Recipe
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup granulated sugar
- 3/4 cup JustEgg (equivalent to 3 eggs)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 5 peeled and sliced apples
- Powdered sugar for dusting (optional)
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper for easy removal.
- Prepare the Batter:
- In a large mixing bowl, whisk together the flour, baking powder, and salt until well combined.
- In a separate bowl, whisk together the granulated sugar, JustEgg, and vanilla extract until smooth and creamy.
- Assemble the Sharlotka:
- Arrange the sliced apples evenly on the bottom of the prepared cake pan.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Pour the batter over the sliced apples, spreading it out evenly to cover them.
- Bake the Sharlotka:
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Remove the sharlotka from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
5. Serve:
- Once the sharlotka has cooled, dust it with powdered sugar if desired and garnish with fresh berries.
- Slice and serve the vegan sharlotka with apples as a delicious dessert or snack.
