It all started from the peach tree… and our Paris trip memories. We planted peach tree last year, got couple of small fruits first season, had our hopes low for the next season, saw crazy bloom this spring and still had almost no hopes…And then we got peaches, a lot of them, super sweet home grown yellow peaches, no fertilizers, no chemicals, just water and Californian sun. So, we ate as many as we could, shared with friends and still had some left. I decided to make peach clafoutis. I first tried clafoutis ( cherry clafoutis) in Paris on the way to Musee D’Orsay first day in France and I loved it. Since then it became one of my favorite deserts. Here is my latest ( and greatest) peach clafoutis recipe .
What is clafoutis ?
Clafoutis is custard like baked French desert traditionally made with black cherries. The batter is very similar to crepes, just a bit thicker. I have made strawberry clafoutis, mixed berries clafoutis, apple clafoutis and peach clafoutis and I have to admit peach clafoutis is an absolute winner !
How to make peach clafoutis ?
Please promise to make peach clafoutis during the peach season and use fresh ripe peaches.
Do not use white peaches. While white peaches are my absolute favorite fruit, they are way too sweet for this recipe.
I experimented with the recipe couple of times, added heavy cream, one more egg, replaced sugar with sugar powder. I even tried making vegan peach clafoutis using vegan eggs replacer and almond milk which was a complete fiasco. So, if you have a good vegan clafoutis recipe without tofu( I’m not a fan) , please comment below or send me the link and I will be forever thankful.
This recipe makes very custardy giggly clafoutis. So, if you want your clafoutis a little thicker , more pie like, I suggest to use less milk and more flour.
Ingredients
2 1/4 cups milk
3 eggs
1 tea spoon Vanilla
1/2 tea spoon of salt
1 cup of flour
2/3 cup sugar
1 tb spoons of butter – for greasing the baking dish
8- 10 medium size yellow peaches
Instructions
- Heat oven to 350F
- Mix flour, salt, and sugar together, set aside.
- In a separate bowl mix milk with vanilla. Add eggs one at a time, whisk well.
- Add dry ingredients, lightly mix all together. Put the dough in the fridge.
- Bring 4- 5 cup of water to boil. Dip peaches into the boiling water for 10 – 15 seconds, take them out and let them cool a bit.
- Peel, pit and slice the peaches.
- Grease medium size baking dish with butter, put peaches into the baking dish, pour the batter over the peaches
- Bake 50-55 min until lightly golden on the sides. The clafoutis should be jiggly in the middle when you take it out of the oven. Do not over bake.
- Let cool down fir 15 min before serving.
- Sprinkle with powdered sugar
How to make peach clafoutis faster?
I know, I know baking is all about following the rules and mixing dry ingredients together first and then wet ingredients, etc.
Here’s a little secret peach clafoutis recipe “by-pass”. You can add all ingredients to the blender and blend them together on low for 15- 20 seconds. Your batter is ready!
How to serve peach clafoutis ?
Peach clafoutis can be served warm or cold. If serving warm, put the dish in the oven for 5-7 mins. Do not use microwave as it modifies the consistency of clafoutis.
