In the middle of January in California, I found ripe passion fruits flourishing in my backyard – a huge surprise this time of the year. With eight of these exotic gems in hand, I decided to recreate a favorite summer treat: Passion Fruit Bars. Having previously experimented with modifying a lemon bars recipe, I found that the bars turned out a bit too firm. So, I experimented a bit and the result was just perfect.

A crucial tip: promise me you’ll use fresh passion fruits for this recipe instead of canned puree. The burst of flavor from fresh fruits is a game-changer. So, here is my passion fruit bars recipe for you to try.

Passion Fruit Bars Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1 cup fresh passion fruit pulp (strained to remove seeds) – about 7-8 small passion fruits
  • Powdered sugar for dusting

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a bowl, combine 2 cups of flour, softened butter, and 1/2 cup of powdered sugar. Press this mixture into the bottom of the prepared baking dish to create the crust.
  3. Bake the crust in the preheated oven for 15-20 minutes, or until lightly golden.
  4. In another bowl, whisk together the eggs, granulated sugar, 1/4 cup of flour, baking powder, and a pinch of salt until well combined.
  5. Gently fold in the fresh passion fruit pulp into the egg mixture.
  6. Pour the passion fruit mixture over the baked crust and return it to the oven.
  7. Bake for an additional 25-30 minutes, or until the center is set.
  8. Allow the bars to cool completely before dusting with powdered sugar and cutting into squares.

Storage Instructions:

Store the Passion Fruit Bars in an airtight container in the refrigerator for up to 3-4 days to maintain their freshness.
