It’s orange season here in California, and this year, I decided to try something new. With so many fresh, juicy California oranges at my disposal, I created a delicious orange tart that’s perfect dessert for any occasion. Here’s my recipe for this delightful treat
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cubed and chilled
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 egg yolk
- 1 tablespoon ice water
- 3-4 fresh California oranges
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1/4 cup fresh orange juice
- 1 tablespoon orange zest
- Powdered sugar, for dusting
Instruction:
- Preheat the oven to 375°F (190°C).
- In a food processor, pulse the flour, butter, sugar, and salt until the mixture resembles coarse crumbs.
- Add the egg yolk and ice water and pulse until the dough comes together in a ball.
- Flatten the dough into a disk and wrap it in plastic wrap. Refrigerate for 30 minutes.
- On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer it to a 9-inch tart pan with a removable bottom. Trim the edges and prick the bottom with a fork.
- Line the crust with parchment paper and fill it with pie weights or dried beans. Bake for 15 minutes.
- Remove the parchment paper and weights/beans and bake for another 10-15 minutes, until the crust is golden brown.
- While the crust is baking, make the filling. Using a vegetable peeler, remove the zest from one of the oranges. Be careful to only take the orange part and not the white pith, as it is bitter.
- In a large bowl, beat the sugar and butter until creamy.
- Add the eggs one at a time, beating well after each addition.
- Add the orange juice, zest, and the juice of 2-3 oranges (enough to make 1/4 cup). Beat until combined.
- Pour the filling into the pre-baked crust and smooth the top.
- Bake for 25-30 minutes, until the filling is set and golden brown on top.
- Let the tart cool to room temperature before removing it from the pan.
- Slice the remaining orange(s) and arrange the slices on top of the tart. Dust with powdered sugar before serving.
