Here’s a basic Buryat Pozi recipe to make pozi at home. Buryat Pozi , also known as Buryat dumplings, is a traditional dish from the Buryatia region of Russia. We’ve used this recipe at home couple of times when we make pozi. It’s not just cooking dinner; it’s a fun family activity, so expect to have some mess at the kitchen 🙂

About Buryat Pozi

The history of Buryatian pozi, or Buryat pozi, is deeply intertwined with the culture and traditions of the Buryat people, who inhabit the Buryatia region of Russia. This dish has its roots in the nomadic lifestyle of the Buryats, who relied on simple and hearty foods that could be easily prepared and enjoyed on the go.

Buryat pozi is believed to have originated centuries ago as a portable and nourishing meal for travelers and herders in the harsh Siberian landscape. The dish consists of meat-filled dumplings, typically made with ingredients readily available in the region, such as beef, lamb, pork, onions, and potatoes. Pozi often served during festive occasions, family celebrations, and community feasts, where it is shared and enjoyed among friends and loved ones.

Ingredients:

For the Dough:

  • 4 cups all-purpose flour
  • 1 1/4 cups warm water
  • Pinch of salt

For the Filling:

  • 1 lb ground beef
  • 1 lb ground lamb
  • 1/2 lb ground pork
  • 2 onions, finely chopped or shredded
  • 2-3 potatoes, peeled and diced(optional)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Dough:
    • In a large mixing bowl, combine the flour and salt. Gradually add the warm water, mixing until a dough forms.
    • Knead the dough on a floured surface for about 5-7 minutes, or until smooth and elastic. Cover the dough with a clean kitchen towel and let it rest for 30 minutes.
  2. Prepare the Filling:
    • In a large mixing bowl, combine the ground beef, ground lamb, and ground pork with the chopped or shredded onions, diced potatoes, salt, and pepper. Mix well to combine all the ingredients.
  3. Shape the Dumplings:
    • After the dough has rested, divide it into small pieces and roll each piece into a thin circle, about 3-4 inches in diameter.
    • Place a spoonful of the filling in the center of each dough circle. Fold the edges of the dough over the filling, pinching them together to seal and form a dumpling.
  4. Steam the Dumplings:
    • Arrange the dumplings in a steamer pot, leaving some space between each one to prevent sticking.
    • Pro tip : Dip dumplings bottom into olive oil to prevent sticking
    • Steam the dumplings over boiling water for about 20-25 minutes, or until cooked through and the dough is tender.

5. Serve:

  • Once cooked, remove the dumplings from the steamer and transfer them to a serving platter.
  • Serve the Buryat pozi hot, accompanied by soy sauce, vinegar, or spicy dipping sauces for added flavor.
