This alfajores recipe is inspired by our trip to South America. We spent almost a week in Argentina, where we ate a lot of alfajores. Even after we came back home and finished all the alfajores we brought with us, we kept talking about them every day. So, I dug out my old recipe book and found this alfajores recipe. Here is a new dessert recipe for you to try and bring a bit of Argentina’s flavors to your home.

Alfajores recipe

Ingredients:

For the Cookies:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

For the Dulce de Leche Filling: 1 (14-ounce) can sweetened condensed milk

Instructions:

  1. Prepare the Dough:
    • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
    • Add the egg yolks and vanilla extract, and beat until well combined.
  2. Combine Dry Ingredients:
    • In a separate bowl, whisk together the flour, cornstarch, salt, and baking powder.
  3. Mix Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Be careful not to overmix.
  4. Chill the Dough:
    • Wrap the dough in plastic wrap and refrigerate for at least 30 minutes, or until firm.
  5. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  6. Roll and Cut the Dough:
    • On a lightly floured surface, roll out the chilled dough to about 1/4 inch thickness.
    • Use a round cookie cutter to cut out cookies. Place them on the prepared baking sheet.
  7. Bake the Cookies:
    • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
    • Remove from the oven and let the cookies cool completely on a wire rack.
  8. Prepare the Dulce de Leche Filling:
    • Pour the sweetened condensed milk into a saucepan and cook over low heat, stirring constantly, for about 1 hour or until thick and caramelized. Let it cool.
  9. Assemble the Alfajores:
    • Once the cookies and dulce de leche are cooled, spread a dollop of dulce de leche onto the flat side of a cookie.
    • Top with another cookie to create a sandwich.
    • Repeat with the remaining cookies and dulce de leche.
  10. Dust with Powdered Sugar:
    • Dust the assembled alfajores with powdered sugar.
  11. Serve and Enjoy:
    • Serve the alfajores immediately, or store them in an airtight container for later. Enjoy these delicious treats with a cup of coffee or tea!
